Ingredients

Mug bread

  • 1 tsp 1 tsp butter
  • 2 tbsp 2 tbsp almond flour
  • 2 tbsp 2 tbsp coconut flour
  • 1½ tsp 1½ tsp baking powder
  • 1 pinch 1 pinch salt
  • 2 2 large egglarge eggs
  • 2 tbsp 2 tbsp heavy whipping cream

Batter

  • 2 2 large egglarge eggs
  • 2 tbsp 2 tbsp heavy whipping cream
  • ½ tsp ½ tsp ground cinnamon
  • 1 pinch 1 pinch salt
  • 2 tbsp 2 tbsp butter

Making low carb simple

Instructions

Instructions are for 2 servings. Please modify as needed.

  1. Grease a large mug or glass dish with a flat bottom with butter.

  2. Mix together all dry ingredients in the mug with a fork or spoon. Crack in the egg and stir in the cream. Combine until smooth and make sure there are no lumps.

  3. Microwave on high (approximately 700 watts) for 2 minutes. Check if the bread is done in the middle – if not, microwave for another 15-30 seconds.

  4. Let cool and remove from the mug. Slice in half.

  5. In a bowl or deep plate, whisk together the eggs, cream and cinnamon with a pinch of salt. Pour over the bread slices and let them get soaked. Turn them around a few times so the bread slices absorb as much of the egg mixture as possible.

  6. Fry in plenty of butter and serve immediately.

Tip!

This recipe is based on our Low-carb mug bread, but you can use any other low-carb bread you prefer.If you don't want to measure the dry ingredients every time, prepare your own baking mix ahead. Take 10 tablespoons (150 ml) almond flour, 10 tablespoons (150 ml) coconut flour, 1 teaspoon salt and 2 1⁄2 tablespoons baking powder. Then you have the dry mix ready for 10 pieces.

    it was plain but good. i’d make it again but i think i’ll splurge with a tiny bit of sugar free maple syrup. I’ve lost 30lb. I can splurge now & then as long as I behave most of the time.

    The ingredients used to make this total more like 6.5g. per servings. 2 Tbs of coconut flour is 8 grams and 2 Tbs of Almond flour is 5 grams. Still it's a great recipe. I added stevia and made it a sweet snack, even without the batter.

    Coconut flour is about 50% of the volume of dry ingredients in this recipe. Your batter will be very runny.

    Thanks for the great recipe! I enjoyed it. I'm not on the keto diet per se, but I have to eat both gluten free and low carb (the latter due to diabetes). I just made this for dinner with some sugar free syrup. It was delicious! It definitely tastes better than it looked. I wasn't sure it would come out because it seemed too eggy. But it was great. I've shared it around. Oh, very filling, too. It made a ton.

    I love this recipe! I actually just make the bread part and sprinkle cinnamon and powdered swerve on top before baking and then put butter on it when it comes out of the oven.

    Hello, I was going through some of the snack and sandwich recipe that you are having and reading here & there on the subject; as a fried mention the keto diet. However I find this recipe called KETO BLT with cloud bread, sound fantastic but what does it stand for "BLT"?

    BLT stands for Bacon Lettuce Tomato, the ingredients between the cloud bread that make up the sandwich.

    After making the first batch and finding it abit bland, I added 1/2 tsp of stevia and 1/2 tsp of cinnamon to the dough and the batter. Absolutely yummy. In fact too yummy I have to tell myself not to eat it all at once.

    I would think a waffle maker would also work for the mug bread portion of the recipe, but it will still need to be pan fried with the batter.

    Each slice is one serving, so once you cut the bread in half, you'll have two servings.

    Hands down, one of the best recipes on this site! It's nice to freshly make the bread, slice it up right into the egg mixture and frying quickly in butter. I made the dry mix in bulk which is easiest for a quick grab when assembling. I top mine with a splash of SF maple syrup, too. I also find this VERY filling which is perfect. Thanks, DD!

    It doesn't have to be a mug! You can use a square (or round) glass dish if needed.

    That was great!!..haha i missed the part about coconut flower AND baking soda...so i mixed 2 eggs, 2 almost 2tbsp almond flower,hwc,a lot of cinnamon and some vanilla extract..was thinking it was like the cream ch n egg pancakes so put it right in the frying lid over it..haha got a nice kinda crispy bottom sectioned and flipped it..kinda turned it into almost scrambled egg kinda deal accidently..was SO GOOD!!..also didnt read the part for TWO serving..i ate it all was delicious..and it didnt kick me out of ketosis..so LOVED IT! Thanks 😁

    Coconut flour and almond flour generally bring different properties to baked goods. With all almond flour, you may find them very dense.

    Hi Kristin
    I am replying to your question about the oven instead of microwave. I doubled the recipe (for the eggs i used 2 whole eggs and 2 egg whites). Then melted butter (2 tbsp) in the bottom of a round cake pan and baked in the oven for 13 mins at 350. Check it after 10 mins or so to see if top springs back, if not keep baking. It tends to stick to the pan, so you really need the butter, but otherwise it turned out great!

    I keep meaning to ask...I use "whipping cream" which is 33% MF. What is the % of fat in "double cream". The only double cream I ever see is "Devon Cream". What should I use in the DD recipes? Thanks.

    I keep meaning to ask...I use "whipping cream" which is 33% MF. What is the % of fat in "double cream". The only double cream I ever see is "Devon Cream". What should I use in the DD recipes? Thanks.

    Double cream will have a higher fat percentage, but it should work just fine in the recipes!

    I made 1 serving in a mug. I sliced into three slices which were still quite thick. Sliced into four rounds would be better for the diameter and height of the result. The photo is a bit misleading because it is triangles and recipe doesn’t reference using a square cooking vessel. Although perhaps this is what is meant by cut in half?
